Japas Cervejaria

Maíra Kimura, Yumi Shimada, Fernanda Ueno and Tania Matsuoka are four Brazilian ‘Sansei’ (Third generation Japanese who were born in a new country of residence). Their first beer, ‘Wasabiru’ - an APA with Wasabi - was launched in 2014. Since then the four talented brewers presented numerous beers, all of which are brewed with Japanese inspiration and ingredients. Paving the way for women in the beer industry, their unique, exotic and delicious beers are on a constant rise, with ‘Japas’ already a familiar name in the thriving craft beer scene in Brazil.

One of the highlights of Japanese cuisine is the tea. And one of the most delicate and flavorful teas is made using the Jasmine petals, called Matsurika in Japan. We added these petals to the recipe of a Pilsen, a soft and delicate beer, bringing Jasmine notes to the aroma and palate.

In this version of Sawā we added plum, a fruit whose flavor ranges from sweet to tart, matching perfectly the style chosen for this beer. The plum tree is also believed to ward off evil spirits and bring good luck to homes.

Sawā is the translation of Sour in Japanese and it’s the chosen name for our series of fruited Sour Ales. In this version we used an absolutely massive amount of Raspberries and Blackberries. A fruit forward take, just the right amount of acidity and tart finish. Sawā Pink, as the name suggests, pours a deep, shiny pink color matching its mouth-watering flavor!

On June 18, 1908, the first Japanese immigrant ship landed in Brazil, marking the beginning of an influence that contributed so much to our cultural formation. This beer is a tribute to all Japanese descendants and immigrants who have come here. An IPA, refreshing and highly hopped, with the addition of dekopon, a mandarin of Japanese origin that also arrived as "immigrant" to our country.

After Kasatu Maru, the first Japanese immigrant ship that arrived in Brazil, many others carried thousands of families, including ours. in 1919 the Kimura family arrived on board the Sanuki Maru. This beer is a tribute to our families, and to all Japanese immigrants. A New England IPA with Yuzu, a rare and extremely aromatic Japanese citrus, as well as loads of citrus hops.

After Kasatu Maru, the first Japanese immigrant ship to arrive in Brazil, many other crossed the ocean, bringing thousands of families, including ours. Shimada and Ueno families arrived aboard the Rio de Janeiro Maru in 1935 and 1936. In honor of them, a Double Hazy IPA: potent, aromatic, with the addition of the Asian orange Kumquat, Idaho 7 in whirlpool and DDH of Citra Lupomax and Lotus, a hop that derives from a Japanese variety.

It is impossible to think of Japan without remembering so many “cute” manga and anime characters. And in Japan, all this cuteness has a name: Kawaii. Moreover, it is a culture that has become a lifestyle with thousands of fans around the world and it is now the inspiration for our beer. It also means something innocent, pure, but not necessarily sweet, so we created a Smoothie NE IPA, light bitterness, pinkish color, flavorful, velvety and with a hint of blackberry and raspberry.

Meet our monster Gojaira: she is so angry that she won a Dank IPA to make her stop blowing off steam. Distracted people may confuse its aroma with that of a certain much debated herb. This aroma is called “dank”, a combination of resinous, herbal, citrus and tropical fruit aromas of certain varieties of hops. Yes, its just hops, there’s nothing illegal here! Strata, Columbus, Simcoe, Citra and Mosaic mix with a smooth malt base for this delicious trip.

”Ichi”, or “Um”, is the first beer of a new series inspired by our Japanese-Brazilian origin. Matcha is a special green tea made from the sprouts of camellia sinensis grounded in stone mill. This beer is our interpretation of this pastry: a combination of matcha and vanilla with the creaminess of flaked wheat and oats, finishing with massive amounts of hops.

Daruma is the Japanese amulet inspired by the Buddhist monk Bodhidharma which, in its black version, means fortune and prosperity.

For this beer we got inspiration from Taiyaki, a type of pastry very famous in Japan that is baked in the shape of a fish and had a texture similar to waffle dough. It comes with several types of fillings, the most traditional being with Anko, a sweet paste of Azuki beans that was also one of the ingredients chosen for this beer. Taiyaki is a pastry imperial stout with a velvety texture, smooth, with hints of chocolate, vanilla and caramel.

Miso, one of the great specialties of Japanese cuisine, is a paste made from the fermentation of soybeans and sea salt. Red miso is a variety that is fermented for a longer time and further enhances umami in flavor giving our beer a unique touch. Black miso is the perfect match between this Russian Imperial Stout, smooth and licorous, and a generous addition of Miso, a combination of complex and powerful flavors in perfect balance.

"Ni", or "Dois", is the second beer in our new series inspired by Japanese-Brazilian culture. In this RIS recipe, we added a rare Vanilla from the Brazilian Cerrado region mixed with Ponkan, a tangerine of Japanese origin. This blend brings a complexity of notes such as dark chocolate, a touch of coffee, light vanilla and the citrus fruit itself. A fusion of aromas and flavors that celebrate the Japanese immigration to Brazil.
